Most shops in the holiday resorts are open 7 days a week. If you are looking for large shopping centres, these are usually open from Monday to Saturday 10am to 10pm. You can find them in or near to Santa Cruz, eg. El Meridiano, Carrefour, Alcampo, Ikea, and many more.
